Well, “countless” would imply that the number of them is so big that it is inherently impossible to count them (counting itself is impossible). “Uncountable” hints at unfeasibility, since not only there is an abundance of such talks, there is often also the lack of documentation about them, so theoretically they can be counted: nothing prevents the existance of such a count, but it is not feasible for various reasons (e.g., too many; no info; nobody cares).
